When the weather is cooler and we don’t have anything in particular planned for dinner, I like to whip up this quick and easy autumnal soup with just a few ingredients that we usually already have in the kitchen. It’s also really easy to add or substitute ingredients. Enjoy!
Easy Autumn Soup
Serves 2
Ingredients
- 4-5 big potatoes
- 2 medium sized carrots
- 1 small Onion
- 1 Vegetable bouillon cube (for 2 cups of water)
- Olive oil
- Pepper
Instructions
- Peel and dice the potatoes into small pieces. Peel and chop the carrots. Dice the onion.
- In a medium size pot heat 3 tablespoons of olive oil. Add the onion and cook until golden brown. Then add the potatoes and carrots. Add the bouillon cube and pour in the 2 cups of water. Bring to a boil and cook for about 10 -12 minutes or until the vegetables are soft.
- Remove from heat and mix with an emulsion blender until smooth and creamy.
- Finish off the bowls of soup with a drizzle of olive oil and pepper to taste.
